Styrian pumpkin seed oil (Kürbiskernöl, from Styria in southern Austria) is one of the great regional specialty oils — pressed from hull-less seeds of Cucurbita pepo var. styriaca at temperatures around 60°C after light roasting, producing an oil with an almost black-green color (thin films appear dark green; thick pools appear dark brown) and extraordinary flavor. The taste is deep, roasted, intensely nutty with a specific pumpkin-seed earthiness that is unlike any other nut oil. It is a finishing oil only — heating destroys the delicate volatile compounds. The classic Styrian applications: drizzled over pumpkin soup (just before serving), over a vinegar-dressed mixed salad, with cream cheese, and in the simple regional preparation of noodles dressed with pumpkin seed oil and garlic. The swirl of dark green oil over pale pumpkin soup is iconic. It also works brilliantly as a finishing oil on vanilla ice cream or cheesecake — the roasted nut character contrasts beautifully with the cold dairy sweetness.
