The taste is deep, roasted, intensely nutty with a specific pumpkin-seed earthiness that is unlike any other nut oil. It is a finishing oil only — heating destroys the delicate volatile compounds. The classic Styrian applications: drizzled over pumpkin soup (just before serving), over a vinegar-dressed mixed salad, with cream cheese, and in the simple regional preparation of noodles dressed with pumpkin seed oil and garlic.
